- Heat oil in medium pot, saute onions for a few minutes.
- Add garlic and cook for another minute.
- Add bitter melon and tomato and soy sauce, mix well. Cook for a few minutes, stirring often.
- Add water or stock to almost cover (about 2/3 covered)
- Bring to a gentle boil, turn down heat and partially cover.
- Simmer until tender (about 15-20 minutes) stirring occasionally.
- Add beaten egg and stir well until egg is scrambled.
- Add salted shrimp paste or fish sauce if using. Mix well.
- Serve with rice! Delicious with fish and rice.
